Why silicone outperforms rigid plastic in a working kitchen
Rigid plastic ice trays develop hairline cracks along the cavity web after repeated flexing, and once a crack opens it holds water and becomes a hygiene problem. Silicone flexes without fatigue, so cubes release by twisting the tray rather than by running it under the tap — faster during service and no water added to the glass.
Silicone also tolerates the full temperature swing a commercial kitchen applies: freezer at −18 °C, oven at 200 °C, and a commercial dishwasher in between. A single item type covers several stations, which simplifies purchasing and reduces the number of SKUs a kitchen has to keep in stock.
Portion consistency and food safety
Cavity volume is moulded rather than cut, so every cube in a tray holds the same volume within a tight tolerance. For bars and production kitchens that portion by cube count, that consistency is what keeps recipe costs predictable.
